Smoked trout with slices of Ham
200g Smoked trout
20g Trout roe
80g Micro-mezclum greens
2 Radishes
1 apple
10ml Extra virgin olive oil
Sea salt (to taste)
Slice radishes and set aside. Do the same with the apple but if not using immediately then immerse in cold water with lemon juice to prevent browing.
Rotate pieces of radish, apple and micro-mesclun greens on a dish with slices of trout and Cinco Jotas Iberian ham. Season with salt flakes and a dash of extra-virgin olive oil.
